Mom’s Corn Beef Hash

Sent to us by Carol Rackliffe of Hamden, Mass. Mrs. Rackliffe is the daughter of the man who owned The Belmont Diner in Springfield. The Belmont is now history, but the spirit of the diner lives on in this hash recipe. This I have sampled and can say without a doubt that it’s the best corn beef hash I ever had.

Ingredients:

  • 2 small onions
  • 2 stalks celery
  • Small green pepper
  • Clove garlic, minced
  • 3 teaspoons of olive oil
  • 2 can of corn beef
  • 4 med boiled potatoes
  • 2 tablespoons, butter or margerine

Sauté onions celery, green pepper and garlic in oil until soft and lightly browned. Add corned beef cubed and mix thoroughly. Add 4 potatoes cubed and combine well with corned beef mixture. Add seasonings and butter. Mix well. Cover and simmer for 30 to 40 minutes.

This is extra good with a dropped (poached) egg on top. Enjoy!
